Autumn Recipes – Apple & Blackberry Overnight Oats 26th November 2019 Nutrition Oats are high in a type of soluble fibre, which means that not only keeps you satisfied and give you slow released energy, Serves 2, Vegetarian, (Vegan) Gluten free (if use GF Oats) Ingredients 50g of rolled Oats Pinch of ground cinnamon 1 Apple, Coarsely Grated Handful of toasted hazelnuts or cobnuts, chopped Zest and Juice of half a lemon 1 medjool dates, coarsely chopped (optional) 125ml of dairy or fortified non dairy unsweetened milk A Handful of Blackberries 2 tablespoons of organic greek yogurt (Can substitute sheep, goat or coconut yoghurt if preferable) Handful of toasted hazelnuts, chopped Method Combine the oats, cinnamon, apple, lemon zest and juice, toasted hazelnuts (reserving a tsp to garnish with) and medjool dates if using to a bowl and mix well.
